I was looking for a recipe just like this for tonight - one I can also eat at room temperature tomorrow when I'm traveling. Will replace the cheese with hummus, I think. Delicious way to enjoy the garden's fall bounty. Thanks very much!

I can now definitively state that this was exceptionally yummy! Made it last night, with a few tweaks based on my recent harvest (thinly sliced eggplant instead of carrots and a hummus sauce instead of cheese) and we loved it. Today I'll make another batch to freeze. Thanks again!
