This sounds delicious! I used to love barley water as a child growing up here in the UK. It is not something I ever encountered in the states though. I think it is a quintessentially English drink…like squash, and it definitely plays on my nostalgia ☺️

Your recipe sounds and looks delicious

Thank you, Solarah! It is delicious and you can adjust the lemon for sharpness and the honey for sweetness which is worth getting just right. I remember drinking lemon barley water in my early twenties when I had issues with my kidney and so I decided to look into it. There are a myriad of essential nutirients in the barley - calcium, protein, minerals, vitamins and trace elements. I was amazed and decided to add it to a traditional lemonade recipe which has even more healthy nutrients. It has a lovely smoothness to it due to the residual fibre in the lemons and barley. The barley can then saved to add to salads, soupls, etc. I like to double the recipe to have a jug cooling in the fridge and then often use it as a cordial for a lovely long refreshing drink. It's a winner all round and I hope you enjoy! Xx

Fabulous and well done you! It will be great to hear how you get on. A good recipe to ease your way back in, truly delicious and highly nutritious - a winner all round. You can use it as a cordial if it's too strong for you. I make extra to keep in a jug cooling in the fridge as well.

I'm excited to try it! I love making iced tea and lemonade in the summer months- when I remember to! So I appreciate your timely reminder, Sue, and also the additional upgrade of barley water. I have heard of it but never tried it yet myself. :)

That's fabulous, it's easy to make and you can double or treble up to store in the fridge. It's rich in flavour and has a substance from the fibre in the lemons and barley. I remember drinking lemon barley water when I had an issue with my kidney when I was in my early 20s. It always did the trick and it wasn't homemade so this is the real deal! It's both preventative and cleansing over a period of time. I've been watering mine down and using it as a cordial so you can do that too. Love you so much and sending hugs across the waves. Xx

My pleasure, Ann, thank you too! It was a revelation to discover so many nutrients in Barley and I decided to add it to a traditional lemonade recipe for a super nutritious and, as it turned out, delicious drink that everyone can enjoy.
