This sounds delicious! I used to love barley water as a child growing up here in the UK. It is not something I ever encountered in the states though. I think it is a quintessentially English drink…like squash, and it definitely plays on my nostalgia ☺️
Thank you, Solarah! It is delicious and you can adjust the lemon for sharpness and the honey for sweetness which is worth getting just right. I remember drinking lemon barley water in my early twenties when I had issues with my kidney and so I decided to look into it. There are a myriad of essential nutirients in the barley - calcium, protein, minerals, vitamins and trace elements. I was amazed and decided to add it to a traditional lemonade recipe which has even more healthy nutrients. It has a lovely smoothness to it due to the residual fibre in the lemons and barley. The barley can then saved to add to salads, soupls, etc. I like to double the recipe to have a jug cooling in the fridge and then often use it as a cordial for a lovely long refreshing drink. It's a winner all round and I hope you enjoy! Xx

I remember drinking lemon barley water when I had an issue with my kidney when I was in my early 20s. It always did the trick and it wasn't homemade so this is the real deal! It's both preventative and cleansing over a period of time. I've been watering mine down and using it as a cordial so you can do that too. Love you so much and sending hugs across the waves. Xx
